The Meatloaf Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup whole milk
- 1 medium yellow onion, chopped
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
The Florida Citrus Glaze
- 1/2 cup chili sauce
- 1 tablespoon grated orange peel
- 2 tablespoons orange juice
- 1 tablespoon regular yellow mustard
The Simple Scalloped Potatoes Ingredients
- 3 pounds potatoes, peeled and thinly sliced
- 3 tablespoons all-purpose flour
- 1/4 cup butter, cut into small cubes
- 2 and 1/2 cups whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions for the Meatloaf
- Preheat your oven to 350 degrees.
- In a small bowl, stir together the chili sauce, grated orange peel, orange juice, and regular yellow mustard to create the citrus glaze. Set this aside.
- In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for five minutes so the breadcrumbs soften.
- Add the ground beef, chopped onion, eggs, salt, and black pepper to the breadcrumb mixture. Gently mix everything together using your hands until just combined. Overmixing will make the meatloaf tough.
- Shape the meat mixture into a loaf on a foil-lined baking sheet or press it into a standard loaf pan.
- Bake for 40 minutes. Remove the meatloaf from the oven and spread the orange glaze evenly over the top.
- Return the meatloaf to the oven and bake for an additional 15 to 20 minutes, or until the meat is fully cooked through.
- Let the meatloaf rest for 10 minutes before slicing.
Instructions for the Simple Scalloped Potatoes
- Grease a baking dish with a little butter.
- Arrange one-third of the sliced potatoes in an even layer at the bottom of the dish.
- Sprinkle the potatoes with one tablespoon of flour, a third of the salt, and a third of the black pepper. Scatter one-third of the butter cubes evenly over the top.
- Repeat this layering process two more times until all the potatoes, flour, salt, pepper, and butter are used.
- Warm the milk slightly on the stove, then pour it evenly over the top of the potatoes. The milk should come up just below the top layer of potatoes.
- Cover the baking dish tightly with aluminum foil and bake at 350 degrees for 45 minutes.
- Remove the foil and bake for another 30 to 40 minutes, or until the potatoes are completely tender and the top is golden brown.
- Let the potatoes cool for 15 minutes so the creamy sauce can thicken before serving.
